$7 Million Pullman Microbrewery, Coffee Roaster Gets City Council Approval

Veteran Roasters will also have a restaurant, café and drive-thru and will create jobs for military veterans.

PULLMAN — A $7 million project to bring a microbrewery and coffee roaster to Pullman was approved Wednesday by the City Council.

Cup O’ Joe LLC wants to build Veteran Roasters — a two-story, 16,800-square-foot facility — at 756 E. 111th St. The project would have a restaurant, cafe with seating for up to 100 people, drive-thru and a second-floor terrace with private dining, on top of its coffee roastery and beer brewing facility.

The project was approved by the Chicago Plan Commission in late March and by the full City Council Wednesday.

Veteran Roasters is partially funded by the Neighborhood Opportunity Fund, which is providing $2 million and tax credits to the project.

Project leads from Cup O’ Joe previously said they would commit themselves to employing veterans through a partnership with Rags of Honor, a nonprofit screenprinting facility.

“We will attract both local and tourist traffic, and, more importantly, create jobs and better employment access and opportunity for our military veterans in Chicago,” project leaders said in March.

The Veteran Roasters project site would be close to fast-food restaurant Culver’s, barbecue restaurant Lexington Betty’s Smokehouse and several planned Invest South/West projects, according to the presentation.

Mark Doyle, the founder and CEO of Rags of Honor, previously said the Veterans Roasters project could debut in 2024 once it got City Council approval.
