LINCOLN PARK — Two friends have teamed up to bring the Capriotti’s Sandwich Shop franchise to Lincoln Park.
Capriotti’s, 1730 W. Fullerton Ave., opened last week. The location — part of a national chain — is owned and run by Justin Thomas and Jaison Chacko, two respiratory therapists and business partners who grew up in India and met while studying together in college.
The Delaware-based chain was founded in 1976 and is known for its whole roast turkeys, meats and cheeses, fresh rolls and produce.
The sandwich franchise slow roasts whole, all-natural turkeys in-house and hand-pulls them every morning, according to Capriotti’s.
Some of its most popular sandwiches include the Bobbie, made with fresh oven-roasted turkey, cranberry sauce, stuffing and mayo; the Capastrami, made with hot pastrami, Swiss cheese, Russian dressing and homemade coleslaw; and the cheesesteak, made with premium steak, chicken or Impossible plant-based meat with melted cheese and hot or sweet peppers.
The Lincoln Park location will have an order-ahead option in addition to being on third-party delivery services. The shop will bring 20 jobs to the neighborhood.
Thomas and Chacko became respiratory therapists after graduating college, but they always dreamed of opening a business together, they said in a joint statement.
“In college, we worked together at a gas station, and we pitched the idea to the owners of opening a deli,” the two said. “We completely designed the menu ourselves and really enjoyed the concept. With that as our background, when we saw the amount of care that goes into Capriotti’s sandwiches, we knew it was something we needed to bring to the community.”
Capriotti’s Lincoln Park store is open 10 a.m.-8 p.m. Monday-Tuesday, 10 a.m.-9 p.m. Wednesday-Saturday and 10 a.m.-7 p.m. Sundays.
