Pilot Project is a brewery incubator that opened in 2019 to give budding brewers and creatives a space to brew their creations. Humboldt Park brewery Ørkenoy started out of Pilot Project, as did Odious Cellars, a startup brewery with plans to open in Logan Square.

Pilot Project’s inaugural beer fest was held last summer.
