RIVER NORTH — After years of trying to expand her business, the owner of a Pilsen juice bar is realizing her dream with two new locations inside fitness studios in River North and Lincoln Park.
Alexandra Curatolo will open Belli’s Cafe inside two Studio Three locations over the next few weeks. The River North location at 648 N. Clark St. is expected to open in late July, while the Lincoln Park spot, 2401 N. Halsted St., will open in August.
“It feels awesome,” Curatolo said. “I’m excited to grow and be able to offer more quality jobs.”
The fitness studio is focused on high-intensity interval training, yoga and cycling. Curatolo will have a counter to serve her organic juices, smoothies, healthy shots, bowls, toasts, coffees and grab-and-go food.
Curatolo opened the original Belli’s original location in October 2013 after noticing a gap in access to healthy foods.
At the Pilsen location, Curatolo has expanded her services to include weekly produce shares, juice cleanses and pre-order juice deliveries.
Curatolo has tried to grow her business for the past eight years, but previous plans fell through. She was excited for the opportunity when the Studio Three team approached her, she said.
“We were immediately drawn to Alex’s commitment to nourishing others and the care with which she sources and uses her ingredients,” Studio Three CEO David Blitz said.
For Curatolo, the expansion to the fitness studio was a perfect fit.
“Our new locations within Studio Three are a natural expansion of the Belli’s brand,” she said. “As a committed athlete myself, I rely on plant-based nutrition to fuel up and help with recovery from intense training, so the menus at Studio Three reflect this ethos.”
The locations will be open 6:30 a.m.-6:30 p.m. Monday-Friday and 7 a.m.-2 p.m. weekends.
