FULTON MARKET — A highly anticipated restaurant from “Top Chef” winner Joe Flamm will debut next year on Fulton Market.
Flamm, who previous worked as an executive chef at Spiaggia and won the competition TV show’s top title in 2018, plans to open Rose Mary, a Croatian-Italian restaurant at 932 W. Fulton Market St. early next year.
At Rose Mary, Flamm will offer food inspired by the small seaside villages along the Adriatic Sea. The chef drew inspiration after driving along the Adriatic coast two years ago with his Croatian wife, Hillary.
“Rose Mary is the culmination of everything I have done with my career,” Flamm said. “But more importantly, it’s the culmination of my personal journey thus far. It’s a marriage of who I am, what I’ve learned and the person I’ve built a life and a family with.”
Diners will find noodles, grilled fish and Balkan-style sausages on the menu, according to Eater.
“It’s the food you find at lively restaurants and taverns on the side of the road in countries along the Adriatic,” Flamm said. “Somewhere that’s casual and fun, with food that’s vibrant, bold, super flavorful and, of course, heavily rooted in Italian technique.”
The restaurant’s name pays tribute to his grandmothers: Flamm was close to his paternal grandmother, the late Mary Rose. Meanwhile, he credits his maternal grandmother, Mary, in establishing his love for Italian food.
The chef expected to open Rose Mary this summer, but his plans were delayed.
“I felt like we were stalled forever — six months out for the last three years,” Flamm told the Tribune. “But now we think we’re actually going to open in 2021 … but that might be optimistic.”
