CHICAGO — The team behind DryHop is opening a Neapolitan pizza bar next door to the Lakeview brewery.
The 2,700-square-foot restaurant and bar, called Roebuck Pizza, will open Sept. 6, according to a news release. Roebuck will focus on providing “modern take” on Neapolitan pizza made in a wood-burning pizza oven from Modena, Italy.
The pizza will be made with a wild-fermented dough and the special oven will ensure it is “thick and crispy on the outside and soft on the inside,” according to Roebuck. The pizzas will be topped with fresh, seasonal ingredients.
One such item: The soppressatta and honey pizza will feature dough topped with hot soppressata (a type of salami), tomato, mozzarella, Caciocavallo cheese, pickled chilis, basil and honey.
There will also be a 25-seat horseshoe bar and a rotating cocktail menu. A “succinct” beer menu will include a Bohemian-style pilsner, a Vienna-style lager and a helles lager, all brewed at the back of Roebuck, according to the pizzeria.
Its 60-seat dining room will be decorated in a “dark and retro” style with a vinyl record collection, according to Roebuck.
Roebuck will be open 4-10 p.m. Monday-Thursday, noon-11 p.m. Friday-Saturday and noon-9 p.m. Sunday at 3159 N. Broadway.
